Oatmeal Cookies Finnish style


I can only say that these cookies were delicious. They smelled great when they came out of the oven! The edges of the cookies were crunchy and crisp and the center was nice and chewy, but not in the soggy way. I will definitely be making these cookies again.

Oatmeal Cookies

Ingredients: (makes about 24 cookies)

110g chopped walnuts, hazelnuts, or any other nuts of your choice, roasted and chopped
105 g flour
215 g brown sugar
1 egg
1/2 tsp. salt
1/2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. vanilla extract
260 g oats
170 g butter, room temperature

Preheat the oven to 177 degrees celcius. Line two baking trays with baking/parchment paper.

Cream the butter and the brown sugar until smooth and creamy (2-3 min.) Then add the egg and he vanilla extract, mix until well combined. Mix the dry ingredients ( flour, baking powder, cinnamon and salt.) Then add the dry ingredients to the creamy mixture with the oats and the nuts. Mix until combined. Spoon some of the mixture onto the parchment paper and mold them a bit with your hands. Its easier when you wet your fingers a little bit with water.

Bake the cookies in the oven for about 12-15 minutes or until golden brown. Let them cool a while on the baking trays them move them onto a wire rack if you have one.

Lemon Cupcakes


I love lemon. I love it in baked goods and in my tea. These cupcakes came out really nice and moist and they had a light lemony flavor. These cupcakes tasted great without the icing but the icing adds more sweetness and something extra.


Ingredients:

195 grams flour

1 tsp baking powder

1/4 tsp salt

113 grams butter, softened

170 grams sugar

1 tsp vanilla extract

50 ml lemon juice

2 eggs

114 grams sour cream ( I used smetana)


For the lemon icing:

115 grams icing sugar or confectioners sugar

2 tbsp lemon juice

1. Preheat the oven to 180 degrees celcius.

2. Mix the dry ingredients in a bowl and set aside (flour, salt, baking powder)

3. Whisk the butter for 30 sec. until creamy. add the sugar and vanilla whisk together. Then add the eggs one at a time mixing well after each addition.

4.Add the dry ingredients alternating with the sour cream and the lemon juice, mix well.

5. Bake in the oven for about 20-25 mins. You can tell when they are done by inserting a toothpick in the center. If it comes out clean they're done.
